Beat one or two eggs well. Heat 1 tablespoon butter in pan until foaming. Pour egg into pan, add cheese, green onions or whatever you prefer to the omelet. Let cook until starting to set but middleis still creamy. Flip one edge of omelet over onto itself about halfway. Flip again onto itself so it is folded three times. Let cook one minute (no more) and remove from pan.

Whether your perfect omelet has a filling or is plain the technique is the same. Fillings should be precooked and cheese grated. Season the eggs with salt and pepper and beat well until you can't see any white then beat again.I follow this classic way but use a spatula to move my eggs. Don't let them overcook, the heat from your pan will finish them and melt the cheese perfectly.. The best way to learn is buy a carton of eggs and practice. I find home cooks aren't aggressive enough with heat (or don't use enough) and are timid when moving food in a pan. Make sure you preheat, preassemble and practice and you'll be turning out perfect omelettes before the end of the day. There are utube videos on technique as well.http://www.bonappetit.com/test-kitchen/common-mistakes/article/omelet-common-mistakes

I'd say make sure you use butter since that is guaranteed not to stick and not using too much milk or it will cook too fast and burn easily. YouTube omelettes its the quickest way to see how it's done by real chefs

It is very simple. Depends on swirling and pulling up the omelette every once in a while. I explain it all here, I make a classic French omelette: http://andcakestoo.com/herbs-cheese-omelette/

Never let the omlette burn in the pan. Use ghee or butter for better taste. You can add chopped coriander leaves along with the onions and green chillies.Regards,Grnadma Lilly
